Last but certainly not least is the final moosed up chocolate stout from my Fierce Beer trio collection.
Once again, they show that it’s possible to take perfection and up the ante a touch more to create something a little different, with the addition of tonka bean.
The Tonka bean is a bit of an oddity, being an ingredient that is getting wider use in the brewing industry but is outlawed in places like America thanks to the FDA.
The reason is that coumarin, which can be found in tonka beans as well as trace amounts in green tea, bison grass and even carrots, were thought to be leading to hepatotoxicity (Chemical driven liver damage) in animals.
It’s all good here in Europe and Canada, so we can enjoy the unusual blend of vanilla, almond and spice – totally tropical!
Described as being “A robust stout with a velvety mouthfeel, cacao notes and – wham“.
With the first two being so damned special, I have very high hopes for this cheeky number.

|Appearance||Near enough black but can make out some very subtle ruby highlights with a light shone behind. It’s so dark however that clarity is impossible to judge.
Produces a small light brown head which settles quickly but clings to the edge of the glass.
|Aroma||This takes the chocolate and the malts of Very Big Moose and packs a tonka based punch.
Gone is the roast of the malts and in its place is the sweet chocolate and the unusual spice of the tonka beans.
Somewhere between vanilla and almond and very aromatic.
There are some fruity esters from the yeast and a little warmth can be picked up.
|Flavour||The flavour really is something to behold and takes you in all sorts of directions at the same time.
Hits of chocolate as well as coconut and almond.
My wife hit the nail on the head when she suggested a dark chocolate Bounty.
Still vibrant, aromatic, spicy and very tropical!
|Mouthfeel||A rich body with enough carbonation add a little chewiness in the form of lots of tiny, foamy bubbles.
Very Big Moose: Tonka is Slick and the flavour lingers on the back of the tongue for ages after swallowing.
Being in imperial territory, you get plenty of warmth on the tongue and the back of the throat
|Overall||Another triumph in stouty form and very unique.
I’ve only had one other tonka bean imperial stout by Lervig Aktiebryggeri and Very Big Moose: Tonka sits right up there with it.
You get a big and bold body with lots of sweetness and spiciness as well as little fruit from the yeast. It all ends with a cheeky warmth being at 12.0%
Absolutely delicious and my idea of what craft beer is all about!
